I am feeling a bit sore all the time, and not enjoying my workouts. I have also noticed decreased strength vs when I have a rest day, my performance is much better. Which is better?

It sounds like you might be experiencing symptoms of overtraining, especially if you're feeling sore all the time and not enjoying your workouts. Having decreased strength and better performance after a rest day could be a sign that your body needs more recovery time. In this case, taking regular rest days and giving your muscles time to recover could be better for your overall fitness and well-being. It's important to listen to your body and adjust your workout schedule accordingly. Incorporating enough rest and recovery into your routine can help prevent burnout and improve your performance over time.
