DVD to AVI/WAV converter to reduce size?

Hey

I was wondering if anyone can help with converting a DVD rip file that i got from a friend. The whole folder is 115GB and its a rip of a medical videos from Anatomy to Micro to Path etc.
So i am looking to convert these files perhaps to AVI or WAV or something so that i can compress it down do only a few GBs and so that this way i can also better organize based on topics they talk about or chapters.

Basically recommend me of a easy to use software.
I also want to upload them to the net for sharing with others soon.
